Fish and Prawn Stew
Ingredients
- 1 tbsp grapeseed oil
- 1 onion, finely chopped
- 3 garlic cloves, grated or finely chopped
- 5 sticks celery, chopped
- 2 carrots, chopped
- 1 pinch salt
- 3-6 drops of thyme essential oil
- 4 tomatoes, skinned and cut into sizes
- 1 medium size fish, cut into chunky pieces
- 200g fresh prawns, peeled and deveined
- 1 bunch curry leave, finely chopped
- Seasoning
Preparation
- Heat the oil in a pan over a low heat, and add the onion, garlic, celery, and carrots, along with a pinch of salt and the thyme oil. Gently cook for about 10 minutes.
- Add tomatoes, increase the heat to high. Let it simmer for a couple of minutes
- Add the fish and prawns, add seasoning, cover the pan, and cook for 5–10 minutes until the fish is cooked through.
- Add curry leave and cook for 2 minutes.
- Serve hot with rice or Irish potato.
