Fish and Prawn Stew

  • 1 tbsp grapeseed oil
  • 1 onion, finely chopped
  • 3 garlic cloves, grated or finely chopped
  • 5 sticks celery, chopped
  • 2 carrots, chopped
  • 1 pinch salt
  • 3-6 drops of thyme essential oil
  • 4 tomatoes, skinned and cut into sizes
  • 1 medium size fish, cut into chunky pieces
  • 200g fresh prawns, peeled and deveined
  • 1 bunch curry leave, finely chopped
  • Seasoning
  1. Heat the oil in a pan over a low heat, and add the onion, garlic, celery, and carrots, along with a pinch of salt and the thyme oil. Gently cook for about 10 minutes.
  2. Add tomatoes, increase the heat to high. Let it simmer for a couple of minutes
  3. Add the fish and prawns, add seasoning, cover the pan, and cook for 5–10 minutes until the fish is cooked through.
  4. Add curry leave and cook for 2 minutes.
  5. Serve hot with rice or Irish potato.
